Chocolate Milo Cake


Ingredients

200g plain flour
1 teaspoon baking powder
5 eggs
200g butter (at room temperature)
½ cup Milo
250g cooking Milk Chocolate
½ cup sugar
¼ teaspoon Vanilla extract

Instructions


1.     Preheat oven to 160 C. Grease a square baking pan, then line with parchment/baking paper.

2.     In a bowl, combine flour, milo, baking powder; set aside.

3.     Place milk chocolate in a bowl, microwave until melted, set aside as well.

4.     Combine sugar and butter in a sand mixer, beat until light or pale in colour. Now gradually add the eggs and continue to beat until well combined. Beat for about 3 – 4 minutes. You will know the egg – butter – sugar mix is ready, when the mixture looks all foamy with bubbles.

5.     Add vanilla, using a spatula, stir in. Sift in the flour mix and fold in gently. Once folded in, add the melted milk chocolate and gradually fold in.

7.     Scoop in batter into the prepared tin and smooth the surface. Place in the preheated oven and bake for 25 minutes or until rise and springy to touch.  Leave to cool before transferring onto a cooling rack to cool down further. Enjoy warm or cold with milk.

Lamb Chow Mein



Ingredients 

370g Lamb leg steak
3 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon Foodace Grill Mix
1 tablespoon Honey
Salt to taste
3 Garlic cloves (Minced)
1 teaspoon chilli flakes
265g mixed vegetable stir fry (1 pack)
275g Fresh Wholewheat noodles (1 pack)

Instructions

1.     Combine soy sauce, sesame oil, Foodace seasoning, honey and garlic in a bowl, mix until combined, set aside. Shred the lamb steak using a knife, and season with salt.

2.     In a preheated pan/wok, add the marinade mix, heat up for few minutes, then add the shredded lamb. Stir fry for about 5 to 7 minutes, until cooked through and browned.

3.     Add the noodles and stir fry vegetables, toss until well combined. Reduce the gas heat and allow to simmer for 3 -5 minutes. Serve in a bowl, hot!.

Homemade Chicken Meatballs


Ingredients

1 egg yolk
500g chicken breast fillets
¼ teaspoon sea salt
Handful cheddar cheese.
¼ teaspoon freshly ground black peppercorn


Instructions

1.     Wash chicken breasts, pat dry with kitchen tissue and place in a food processor. Using the pulse function, process until chicken breasts become semi smooth with tiny pieces still visible.  

2.     Add the remaining ingredients and process further until they are well combined. Once well mixed, roll into small balls. Place on a baking tray or in a bowl, cover with cling film and then place in the fridge for couple of hours.

3.    In a skillet or frying pan, heat up 1/3 cup of avocado oil on a medium gas heat and fry until golden bowl and cooked through.

4.    Serve hot or warm
