Easy Homemade Pizza

For Pizza dough

2 cups plain flour
1 teaspoon dried yeast
1 tablespoon Xylitol sugar
Pinch of sea salt
1 teaspoon avocado oil
1 cup of warmed milk
For Tomato sauce

3 tablespoon tomato paste
1 tablespoon avocado oil
1/4 teaspoon Ducros curry powder

Toppings

Grated Mozzarella cheese (generous amount)
Chopped Paprika peppers (small amount)
1 big beef sausage (thinly sliced)

Instructions.

1. Place the warm milk in a bowl or big cup, sprinkle the yeast over the milk, stir and leave to rest for 5 minutes.

2. In a bowl, add flour, sugar and salt; stir to combine. Then add the yeast mix, stir until completely combined. Tip on to a clean work surface, sprinkle the oil on the dough and begin to knead until dough becomes smooth and elastic.

3. Transfer back in the bowl, cover with cling film and also with a towel; place in a warm place and allow to rise double the size. This should take about 45 minutes.

4. Meanwhile, start making tomato sauce while waiting on the dough to rise. So, place all ingredients for tomato sauce on a sauce pan and heat up. Fry for about 3 minutes and set aside.

Preparing the Pizza


A. Preheat oven gas 140 degrees Celsius.  Prepare the baking trays by spraying light oil on the trays, so as to prevent the pizza doughs from sticking to the pan.

B. Punch dough down so that it deflates, then divide into half and form 2 round ball. Take one ball and begin to flatten on a lightly floured surface. You can use a rolling pin or your hands. Roll out as thin or as thick; your choice. Repeat same for the second  dough ball.

C. Lightly grease a baking tray and then sprinkle flour on the tray. Add toppings; tomato sauce, chopped paprika peppers and beef sausage. You can mix and match...

D. Place in a preheated oven, gas 140 degrees celsius, bake for 10 - 12 minutes or until the pizza edges are golden and crispy.

E. Serve hot and can be reheated if cold. Enjoy and I hope to hear your feedback soon.

Easy Mixed Vegetable Soup


Ingredients 

200g kale
400g spinach
1/2 cup palm oil
1/3 cup crayfish
3 scotch bonnet
1 cup meat stock
2 knorr cubes
Sea salt to taste
1 and 1/2 small onion
2 smoked Turkey legs (cut into small pieces)
500g of Mixed meat (shaki and deboned Cow foot)
4 dried fishes (washed with cold water)
90g uzziza leaves or 2 handfuls (roughly chopped)
2 small paprika pepper

Instructions


1. Wash deboned cow foot and shaki, place in a pressure pot. Season with 1 knorr cube, sea salt and 1/2 onion. Cook for 25 minutes or less, depending on how tender you love your meat.

2. In a big pot, place the smoked Turkey, pressure cooked meat, washed dried fishes and then add 1 cup of meat stock from the pressure cooked mixed meat; bring to boil. Allow to cook for 5 minutes (I cooked on the biggest burner).

3. Wash the crayfish, scotch bonnets and 1 onion; blend with very little water until smooth. Add this into the pot as well.

4. Now, add palm oil and season with 1 knorr cube. Stir, cover pot and allow to cook for another 3 minutes.

5. Meanwhile, while the base of the soup is still cooking; combine uzziza and paprika peppers in a food processor and blend until finely chopped. Set aside. Also, blend the spinach and kale in the food processor, separately and set them aside.

6. ** BACK TO THE SOUP BASE** Once 3 minutes is up, taste and season further with salt if need be. Once satisfied with the taste, add the blended Uzziza and paprika mix, stir and leave to cook for like 3 - 4 minutes.

7. Next, add kale, stir and allow to cook for another 3 - 4 minutes; stir occasionally. Finally add the spinach, stir in. Once wilted, turn of the gas and enjoy.


NOTE:

You can swap kale for Ugu.

Easy Cough Remedy - Strawberry Flavoured.

It is never fun when one gets down with cough, especially persistent dry cough. Oh! dry cough is a terrible thing to have and our Danica mama is always coming down with cold and cough, hence my quest for natural remedies that works wonders for us. I have other cough remedies previously posted on here, you can check out old posts to find them. 

So, this cough remedy is our permanent solution to dry stubborn cough, it really does work for us. My only issue is that I slack so much in making sure we have this remedy constantly at home, not just only when cough comes knocking. I am so glad to be sharing this recipe with you all, not only does it make the cough disappear, it also detoxifies the body. If you can, drink this every day, especially when you wake up in the morning...


Ingredients


4 lemons (Juiced)
1 lime (Juiced)
30g fresh ginger
1/2 teaspoon Apple cider
1 cup  warm water
3 tablespoons Manuka Honey

For Flavour 

3 strawberries (cut into small pieces)
1/3 cup water

Instructions

1. In a small saucepan, add the strawberries and 1/3 cup of water. Bring to boil and allow simmering for 5 minutes. Set aside to cool down. 

2. Wash ginger, cut and place in a blender. Add warm water and blend until smooth (do not peel off the skin of the ginger).

3. Place a nut milk bag over a clean jug, then strain the strawberries, blended ginger, lemon and lime juice. Put on a pair of gloves and squeeze the bag. Set the nut milk bag aside. 

4. Now, add honey and Apple cider; stir the mixture until well combined. Pour the remedy into a clean jar with lid and refrigerate. This can stay in the fridge for up to a month. 

5. Drink this every 4 hours; 15 ml for a child and for adults 30 ml or more as and when required.

Xylitol Puff Puff


Ingredients.

3 cups plain flour
4 tablespoons xylitol sugar
1/2 teaspoon ground nutmeg
Pinch of salt
2 cups of warm milk
1 tablespoon dried yeast
1/3 cup warm water

Instructions.


1 .  combine warm milk and dried yeast in a cup. Stir well to combine, then cover with cling film and leave to rest for 10 minutes.

2. In a bowl, sift in flour, then add salt, nutmeg and sugar. Now, add the yeast and milk plus the water into the bowl of flour.

3. Mix all until well combined. Cover with cling film and a tea towel, then leave in a warm place for the yeast to act. Leave in a warm place for 45 minutes to an hour.

4. Heat up oil for deep frying. Once heated, scoop in the puff puff batter, either with your hands/fingers or ice cream scooper (whatever works for you really).

5. Fry until golden brown.  Enjoy.
