JERK CHICKEN





ALL YOU NEED

1kg chicken legs
2 scotch bonnets
8 garlic cloves
1 tbsp white wine vinegar
1/4 tsp Cameroon pepper
15g ginger
1 tbsp maggi season up
1 tbsp chicken seasoning
3 tbsp light soy sauce
1and 1/2 tsp paprika
1 tbsp suya spice
Fresh thyme
1/4 tsp cinnamon 
Basil

COOKING INSTRUCTIONS





Place chicken on a chopping board, make three incisions on each leg and place them in a bowl.

Place the rest of the ingredients in a food processor and process.

Pour the spicy mixture over the chicken. Using your hands (Please wear gloves), coat the chicken legs with the marinade.

Cover bowl, then transfer to the fridge and allow to marinate overnight or up to 24 hours. 

Preheat oven gas 180c. Place marinated chicken legs on a grill pan or rack. Grill in the oven for 45 minutes. 30 minutes into cooking time, add 1 tablespoon of sunflower oil on a bowl and sprinkle on the legs. 

After 45 minutes, remove from the oven and serve with rice, salad or eat alone.

Lean Turkey Burgers

I love all kinds of meat, they are good source of protein and other nutrients. But when it comes to making healthy choices, choosing the right kind of meat becomes important. Turkey meat is a rich source of protein, iron, zinc, potassium... and when skinless is low in fat. Regular turkey consumption can help lower cholesterol.

I am currently on my weight loss journey and it has not been easy. It is even more difficult to be on this journey and still cook for the family. I honestly don't force about them not eating super healthy foods with me, I mean they are kids and also, I did not start the healthy eating with them early. They enjoy whatever they want but with caution. I also ensure they eat their vegetables but sometimes, they can be grumpy about it, which is absolutely fine in my book. So, what I do now, is switching healthy alternatives of what we normally eat, when possible! That way, we all enjoy as a family.

So today, instead of having our normal beef burger, we had lean turkey burgers. These burgers are so tasty and perfect for the weekend, when you want to treat the family. Here is how to make these burgers...


WHAT YOU NEED

520g lean turkey breasts, chopped into square
Handful of basil
1/2 teaspoon ground garlic
1/2 teaspoon maggi season up
1/4 cup grated cheese
1/2 teaspoon white pepper
1 small onion, chopped roughly (optional)
pinch of salt
1 small egg

COOKING INSTRUCTIONS


Put all ingredients in a food processor, whizz until smooth and thoroughly combined.

Divide the turkey mixture into  six portions. If you have a burger press, line it with cling film, place a portion burger mixture, cover with cling film and press (just as seen in the picture).

If you don't have a burger press, slightly damp your hand and shape the portions into even sized burgers. Transfer burgers onto a plate and put in the fridge for 30 minutes to an hour.

Heat up a grill/griddle pan over  high heat. Cook the burgers for 5 minutes on each side or until cooked through. Serve with burger buns or eat with salad leaves.

This recipe serves 6 and you can add whatever spices you want; make it unique to you.

Homemade Wholemeal Pizza


So excited to be blogging again. It has not been easy but this time, I will try and put up recipes once a week. I am still working on this new blog, so please bear with me. Right, Pizza recipe...

Making pizza is one of the easiest things to do, you do not need to know how to bake to make this. This recipe is simple and ideal for those who have not made dough before and you don't need a food processor for this one. Here we good!


WHAT IS REQUIRED

300g wholemeal bread flour
1 teaspoon yeast
1/2 teaspoon salt
1 teaspoon olive oil
200ml plus 2 teaspoons of warm water

FOR TOMATO SAUCE

3 tablespoons Nigerian stew

FOR TOPPING

3 slices turkey breast (Chopped)
1/2 cup sweet corn
Handful olives (sliced)
1 cup pizza cheese (you can add more)

These ingredients makes 2 pizzas
cooking time 8 minutes
Prep time, less than 25 minutes plus 30 minutes period for the dough to rise


METHOD

Set oven to 220C/gas 8. Line oven pan with baking parchment papers.


Making the dough
Pour in the flour into a mixing bowl, stir in the yeast and salt. Make a well, then pour in 200ml warm water. Using a fork or a wooden spoon, mix all together until the dough comes together.

Tip onto a lightly floured work surface and knead for about 5 minutes or until the dough becomes smooth. Place the dough in a warm place and allow to rise for 30 minutes. But if you want a thin crust, then no need to leave for 30 minutes.

Bring out dough, add the olive oil and combine. Tip again onto a lightly floured work surface, knead dough again for about a minute, divide into two portions and roll out each dough using a rolling pin. Slightly fold the edges as seen in the pictures. Lift and place the rolled out doughs onto the baking parchments.


Adding the sauce
Smooth sauce over bases with the back of a spoon. Scatter the sweet corn, turkey breast slices, olives and cheese. Put the pizzas in the preheated oven. Bake for 8 minutes or until crisp. Serve hot or cold.


NOTE:

You can change toppings to what you love and the sauce to what works for you. I love my Nigerian stew; never disappoints.
